Khanap pa can be prepared with a whole fish or fish fillet. In this recipe, I propose you the version with the whole fish.
For 4 persons
Ingredients
800 g of fish
4 tablespoons minced shallot
3 tablespoons of minced lemongrass
50 g of kiep mou (pork rind chips)
2 chili peppers
50 g Thai basil, detailed then sliced
½ teaspoon of salt
3 tablespoons of fish sauce
2 tablespoons of vegetable oil
banana leaves
Method
Gut, wash the fish and make cuts on the sides.
In a large mortar, crush the shallots, lemongrass, kiep mou and chili peppers until you get a homogeneous mixture.
In a salad bowl, mix the crushed herbs with the fish, Thai basil, salt, fish sauce and oil.
Wrap the preparation firmly in banana leaves and grill for about 30 minutes.
