Khao nom babin is a coconut pancake made either of ground rice or rice flour. In Thailand you will sometimes find it coated with eggs. I propose you a recipe based on rice flour and oven baked instead of pan-fried.
For 4 to 6 persons
Ingredients
200 g of glutinous rice flour
50 g of rice flour
100 g dried grated coconut
150 g sugar
¼ teaspoon of salt
100 ml of coconut milk
Method
In a large bowl, combine the flours, coconut, sugar and salt. Moisten with the coconut milk and 150 ml of water and mix until a uniform dough is obtained.
Transfer to a baking pan (you can use a pie ring lined with parchment paper) and bake for 40 minutes in a preheated oven at 180°C.
You can coat the surface of the cake with neutral vegetable oil halfway through baking to prevent it from drying out.
