Khao nom khok is a kind of poffertje (mini Dutch pancake) made from rice flour. You will need a specific mold to make these pancakes. In Laos, they are eaten as a snack rather than as a dessert.
For 4 persons
Ingredients
Bottom layer
125 g rice flour
20 g sticky rice flour
75 g sugar
100 ml of coconut cream
¼ teaspoon of salt
Top Layer
50 ml of coconut cream
1 green onion, thinly sliced (optional)
vegetable oil
Method
In a container, mix the ingredients of the bottom layer with 250 ml of water.
In another container, mix the ingredients of the top layer.
Heat the mold and brush with oil. Pour the mixture from the bottom layer (fill at ¾ ) into the mold. Bake for 3 minutes or until the dough is firm.
Pour the coconut cream into the core of each pancake, sprinkle with green onions and leave to cook for another 3 minutes.
Serve the pancakes in pairs.
