Khao nom mo keng is a flan often garnished with shallots. The name literally means “soup pot cake”. Very few Lao households had an oven. The cake was baked in an improvised oven consisting of a pan covered with embers.
For 6 persons
Ingredients
300 ml eggs, beaten
300 ml coconut milk
200 g sugar
2 tbsps of rice flour
½ tsp of salt
2 tbsps thinly sliced shallots (optional)
Method
In a large bowl, combine the eggs, coconut milk, flour, sugar and salt.
Transfer to a mold and bake for 1 hour in a preheated oven at 150 ° C. Sprinkle the shallot on the flan after 20 minutes of cooking.
