Voun is a traditional Lao dessert with eggs and coconut milk jellified with agar-agar. The traditional aspect has a layer effect with the agar-agar on the bottom layer.
For 4 to 6 people
Ingredients
10 g agar-agar in strips, cut into small pieces
500 ml coconut milk
200 g brown sugar
½ teaspoon of salt
3 eggs, beaten
Method
Soak the agar-agar in cold water for 30 minutes. Drain.
In a bowl, mix the coconut milk and the beaten eggs.
In a large saucepan, bring 500 ml of water with the agar-agar to a boil. Lower the heat and simmer for 10 minutes or until the agar-agar is completely dissolved.
Stir in sugar and salt.
Add the coconut milk and egg mixture then mix well.
As soon as boiling resumes, remove the pan from the heat, pour the mixture into a mold and let cool.
Serve cut into a diamond shape.
"To remove the layer effect, replace the water with coconut milk and dilute the agar-agar in all the coconut milk, thus 1 l in total."
